Using a rare sub-variety of agave known as Coyote Agave, Los Seite Misterios have produced this expression of Mezcal. Oh the wonders of the world of agave! Mezcal can be made from a huge number of agave plants, whereas tequila can only be made from blue agave. The result is that Mezcal can be a little more rustic, though because of its traditional production methods, it's also subtly smoky.
