Corte Vetusto's Ensambles are limited releases, with each batch of the artisanal mezcal showcasing a different blend of agave varieties. The third in the series is a joven (unaged) mezcal made from equal parts espadin and madrecuishe agave. The agave is milled with a traditional volcanic stone tahona wheel, cooked in a conical earthen oven, naturally fermented, then double distilled, first in a copper pot still and then in an ancestral clay pot still. This impressive mezcal is ideal for sipping neat and will shine in premium cocktails.
