This artisanal Alipus San Baltazar Guélavila Mezcal is produced using Espadin agave by small batch, father and son distillers Cosme and Cirilo Hernández.
Gentle smoke and agave distillate with a mineral, tinny edge.
Great mouthfeel, more roast (burned?) agave and balanced with sweetness. Earthy, but not particularly vegetal at all.
Sugar cane smoke.
Quite nuanced and different to other mexcals we've enjoyed recently - just what you hope for from a mezcal that's been specifically sourced from a small traditional producer.
