Southwestern Distillery's Cornish Pastis is the first pastis ever created in the UK. A traditionally French spirit made with star anise and liquorice, alongside other exotic herbs, they have given it their own spin, using Gorse flowers that the master distiller foraged himself from Cornish cliff tops and water from a local spring. The result is a richly smooth spirit with bags of citrus and aromatic flavour. Just don't expect to find it in your local bakery.

This is truly awful. I cannot understand why anyone who likes pastis would even give this a one star review. Avoid.
It's a bit reminiscent of pastis. By the same measure, it's also reminiscent of Tarquin's gin and maybe Opihr. I don't think it's a bad product, don't get me wrong- what I do think is that because of how far it is from a pastis, i think calling it a pastis and pricing it where it is is a bit much. Do not give it the standard ratios you're used to if you drink pastis, it's so watery just a dash will do- and I probably wouldn't bother if you're repulsed by the mentioned gins.
I bought a bottle as an experience since I was born and grew up in the south of France and know pastis really well. I would say it's closer to Anisette... But at 41% and cloudy looking, it's not pastis. It's like it's been watered down already. So if you're used to the taste of Ricard or 51, you will be disappointed. I found that if you add a dash of caramel syrup from Costa into your glass, it will sort the taste right out.
Bought a bottle on the Distillery Tour. Delicious, love aniseed and have tried French pastis, this is so smooth
