A base of white wine is fortified with gin and infused with an array of herbs, calamus roots, and lemon and grapefruit peels. Finally, it is blended with a batch that has been infused with burnt herb and citrus-rosemary and gently sweetened with acacia honey. Splendid sipped neat over ice and makes an excellently refreshing longer drink mixed with tonic, or sparkling wine.
