The Crossbill folks up in Scotland have created their very own Pineapple Gin Liqueur, made by combining their gin with pineapple (obviously), ginger and thyme, then barrel-ageing the mixture in casks that previously held Pedro Ximenéz Sherry. Ought to be excellent over ice, or enjoyed with tropical fruit juices...
