The Wrecking Coast Honey

From the wonderful Wrecking Coast Distillery in Cornwall, it's the 2021 expression of Honey Sloe Gin. To begin the process, a bold, juniper rich gin is infused with sloes and a subtle mix of citrus and spice, then allowed to slowly steep for no less than three months. A month before bottling, the Wrecking Coast team begin to gradually add sweetness to enhance the rich depth of the berries – which is clever and logical, its always good to taste as you go when preparing food and drink, to get a perfect balance! Finally, wildflower honey from local Cornish hives is added, wrapping this all up beautifully. A comforting winter warmer sipped neat, and fantastic for mixing up some refreshing summer sippers too!

Tasting Note by The Chaps at Master of Malt

Dark, unctuous berries, jammy with a touch of earthen depth. Warming cloves and spice with a good balance of citrus, background sweetness that doesn't overwhelm, and silky, floral honey.
