
This seasonal release from the Cambridge Distillery is produced entirely with distillates of botanicals harvested in the final six months of 2022. This was the coldest foraging season yet for the folks at Cambridge, but they succeeded in gathering the likes of cobnut, bay leaf, blackberry, lemon thyme, and anise hyssop, each distilled individually before being expertly blended. A superbly complex expression, enjoy this served chilled, with a sprig of fresh rosemary.
