The Symphonia selection of tipples from Northern Ireland is driven forward by a deep knowledge of science - a handy thing when you're distilling. Plenty of reactions and the like going on. The first release from the range is a dry gin boasting a fine balance of classic juniper-y goodness, bright citrus bursts and herbaceous richness. Music to our ears!
Orange and lime rush to the fore, shortly followed by savoury hints of basil and nettle tea. Juniper is pine-y and robust, underpinning the mixture.
