St. Patrick's Distillery in Cork make their Irish gins using a combination of Lady Claire and Rosetta potatoes as the base spirit. As for botanicals, this expression is rather to-the-point, using just juniper, coriander, lemon peel, liquorice and angelica root. Expect defined juniper herbaceous notes carried on a creamy spirit with this one.

Fragrant and earthy, with juniper at the fore, giving it an almost oaky quality. Angelica, lemon and liquorice impart a subtle sweetness.
