Papillon Mariposa Gin
A gloriously flavoursome variation of Papillon Gin from Dartmoor – this edition was allowed a few months of rest in Pedro Ximénez sherry casks. Cask aged gins are always intriguing, particularly ones given time in sherry casks, as the bold flavours imparted make for some incredible cocktails, but also mean the gin can be simply sipped neat or over ice.

Bright orange and lemon, with nutmeg and cinnamon developing, soon joined by a crackle of juniper and some dried fruit sweetness for balance.
