Perhaps the most innovative Gin yet? Oxley Gin is distilled under vacuum, meaning that the Distillate boils at -5 degrees Celsius, and re-condenses at -100 Celsius. The result of all this laboratory-based shennanigannary is a gin that manages to retain many of the very subtle and delicate flavours that can be lost when heating botanicals either in the pot, or with vapour.

Nose: Clean juniper aromas, with blossom, hints of soft pine needle, zest and dry herbs.
Palate: A herbal, zesty, almost effervescent palate with notes of juniper and grapefruit peel, as well as aniseed.
