
The Never Never Distilling Co. in Australia like juniper. A lot. In fact, for its Triple Juniper Gin, the adored seed cone imparts is flavours to the spirit in three ways...
1. Juniper is steeped in the spirit for 24 hours.
2. Fresh juniper is added to the spirit from step 1, and it's then distilled in a pot still.
3. Juniper is added to the vapour basket of the still.
It's not just juniper in this gin, though. The Never Never folks also use Australian pepper berry, angelica, cinnamon, lemon, lime, liquorice, orris and coriander to build out its fantastic flavour profile.
Fresh, oily juniper bursts from the glass, supported by floral whiffs of citrus blossom and angelica. Bright and vibrant stuff, this.
