Jensen's Old Tom Gin Bottling Note
A curious gin from Jensen's. You may know Old Tom gins for being sweeter than the usual dry gin and that is certainly the case here with the Bermondsey Old Tom. However, what's different is that this isn't a sweetened gin at all! It's made with a recipe taken from a 1840s distillers notebook, and features a hefty helping of botanicals, which has resulted in the Old Tom flavour profile without the Old Tom sweetener. Impressive, an excellent in a Martinez or Tom Collins.

Nose: Spicy and intense nose. Plenty of juniper, cut herbs, rosemary, a little coriander. Blossom.
Palate: Floral palate with cereals, lavender, hints of apple blossom and aniseed. Big, spicy juniper.
Finish: Spiced. Citrus zest and aniseed.
