In The Welsh Wind Palo Cortado Cask Aged Gin 70cl

Way out on the west coast of Wales, In The Welsh Wind is busy making a host of excellent spirits, with a particularly careful eye to the world of fantastic gin. This time, it's not only focused on distilling delicious juniper-based spirits, however – it's aged the gin, too! Starting with a base of its superb Signature Dry Gin, the distillers then filled the spirit into casks that previously held Palo Cortado sherry. Palo Cortado is an intriguing variety of sherry, showing off not just the familiar dried fruit sweetness, but also a host of savoury, nutty notes. These notes have made their way into In The Welsh Wind's gin, and it's a fascinating sip. Enjoy neat or over ice, or perhaps even give it a go in a Highball.
