
A seasonal gin from Irish distillers Glendalough (who are also making whiskey and have received investment from rugby star Brian O'Driscoll) made with wild botanicals from the surrounding Wicklow mountains. It can be difficult to forage in winter (and some years they may not be able to produce a gin for this season), but when the weather is on their side, you'll see from the foraging date and distilling date on the label that the botanicals are distilled the very next day.
Juniper and pine are supported by some tart winter berries.
