Durham Gin

"Rex Habit Extra, Quicquid Episcopus Habit Intra" as it says on the Durham distillery website. Brings back such memories of Durham. Oh, Durham... (Jake studied Ancient History at Durham and although he's staring wistfully into space right now, he should return to this Bottling Note in just a moment - hopefully without providing us with any of his anecdotes.) Distilled in the eponymous city in the northeast of England, Durham Gin is made with ten botanicals including juniper, celery seed, elderflower and pink peppercorn as well as a secret mix of other herbs and spices. Some of these are macerated prior to distillation, some are added into the still and others go in the gin basket above depending on where the flavours are best extracted. Produced in small batches of just a few hundred bottles, Durham Gin provides balanced notes of citrus, spice, fresh florals and earthy roots.
