Defiance Old Tom Gin
Defiance distillery's limited edition Old Tom gin has been sweetened through the infusion of birch tree syrup harvested from the North Pennines and Scotland by The Birch Syrup Company. This stuff doesn't come easy, with 100 litres of birch sap creating just one litre of syrup! The syrup adds a smoky dimension to the gin alongside the sweetness, making it rather sippable indeed.

Orange citrus is shrouded by a subtle woody smokiness, giving way to sweetness, a hint of cinnamon and undertones of juniper.
