Monastic Gin - Blackwater (That Boutique-y Gin Company)
Distilled at Blackwater using botanicals from their monastic garden that would have been familiar to some of Ireland's earliest distillers back in the 11th and 12th centuries. Around the time the Ardmore round tower was built in County Waterford, in fact.
Batch 1 is a release of 750 bottles.
Tasting Note by The Chaps at Master of Malt
Nose
Aromatic citrus surrounds notes of fresh linen and rose. Dried juniper brings a helping of slightly Christmas-y spice.
Palate
Spring blossoms, lemon meringue and violets. A little bit buttery.
Finish
Red apples and crisp juniper on the finish.
Overall
A yummy, gin-shaped time machine from Blackwater.
