“What can I say about this gin? I initially tried it because it was made by a local producer and I didn't expect too much, being completely honest. How wrong I was! The second I tried it I knew it was something special. It has a wonderful depth of flavour and is very balanced and smooth. In short (as I'm not brilliant with words!), it tastes absolutely stunning. I would have no hesitation in recommending this to anyone and have bought several bottles for Christmas presents! This gin WILL NOT disappoint! ”

Hill Billy Gin

Hill Billy Gin was created by Glyn Bufton, landlord of the Michaelchurch Escley's Bridge Inn, and his Business Partner Lloyd Reed. The duo crafted it with a balance of slow maceration and vapour infusion using a selection of botanicals sourced from the Black Mountains (a group of hills in southeast Wales and England) including juniper, Gwatkin Herefordshire apples, liquorice, angelica and cardamom.

I stumbled across this Gin by accident and after sampling it, it opened up a whole new experience. I had only drunk proprietary brands before, thinking I was drinking the cream of the crop. There is a vast difference between this gin and a popular gin in a G-Green bottle. It made me want to look into the fascinating world of gin. With Hillbilly Gin you can taste the complex mash of herbs and I can taste liquorice and fruit. With the 'Green' bottle gin all you can taste is, pearl drops, or the smell of nail polish. Research has revealed this is because of the way the gin is made. It is apparent that ‘proper gins' like Hillbilly take a ‘narrower cut’, (he says, kidding on he knows what he’s talking about) of the distilled liquor. You have the first liquor coming off called the ‘Head’ you have the second lot the ‘Heart’ and the end lot is the ‘Tails’ and it's the head and tales that give you the pearl drops taste. Hillbilly obviously discard this, (they may re-distill as well) whereas the Green bottle gin obviously use it. Be warned it’s like drinking Earl Grey, after drinking 'proper gins' especially Hillbilly, there's no going back. Try it neat before you put your mixer in. How to neat:- I’ve adapted this from a Whiskey distillery tour a few years back. Keep Hillbilly in the freezer. Swish cold water in a glass, throw the water out, splash of Hillbilly Gin swish it around a bit and then sip to savour the taste. If you want to put tonic in it, I like fever tree with a twist of lemon. And oh, my wife uses the (empty) bottle as a flower vase on the window sill, she says she wants a set... I'm working on it! STOP PRESS, Apparently, they also do a RED, with Elderflower; Raspberries, and Strawberries, sounds sweet, (haven’t tried it), dare I say probably for the ‘ladies’, but I’m willing to give it a go, if/when I find some.
