A Caribbean gin with a citrus-forward profile, and hearty helpings of juniper. Distilled in the Dominican Republic using local sugar cane, the distillery burns cane biomass to create its own renewable energy, and the CO2 from the fermentation process is captured for use in local carbonated drinks. The gin then voyages across the Atlantic Ocean on a wind-powered sailing ship for a lower carbon footprint.
