This juniper-forward gin hails from the Dominican Republic, where it's distilled from locally grown sugar cane, using renewable energy! The distillery uses burnt sugar cane biomass to produce its own energy, and the CO2 from the fermentation process is captured and reused in local carbonated drinks. The gin is then transported across the Atlantic via an old wind-powered sailing ship for a voyage that combines both old traditions and a climate-conscious approach.
