Vault Vermouth

Vault Aperitivo, initially launched as Vault Vermouth in 2018, stands as a modern distillery with a focus on vermouth and botanical aperitif-led spirits. The venture was started by Dan and Sharon Joines, finding its first home in Sorella, a small Italian restaurant in London co-founded by Dan that same year.

The creation of Vault was influenced by numerous trips across Europe and an admiration for the tradition of aperitivo, something the founders felt was lacking proper representation in the UK. In 2022, Vault Aperitivo expanded its team to include Maire & Max Chater, the minds behind Victory London Distillery, bringing with them valuable experience and a shared interest in aperitivo.

With this new phase, Vault Aperitivo introduced a refreshed brand image, an expanded product range, and a new space for storytelling. The company is committed to being environmentally conscious, striving to build a responsible business.

Through a partnership with Ecologi, the distillery contributes to reforestation by planting a tree with every order. They employ energy-efficient methods in their production processes, including cold distillation, which reduces the need for intensive heating and water use. Their packaging efforts are eco-friendly, utilising biodegradable and 100% recyclable materials.

This includes glass stoppers made from recycled glass, UK-made glass bottles that help in reducing their carbon footprint, plant-based seals that are biodegradable, and labels made from up-cycled materials like Bagasse, hemp, and linen fibres. Even their delivery packaging is made from 100% recycled cardboard, avoiding the use of plastic air bags or bubble wrap.
