The Reference Series is an ambitious, exciting, and really delicious project. As you go from I to II to III, the quantity of older, exciting and altogether yummy whisky goes up (the exact proportions are stated on the bottle). We've created a series that when tasted in order, you'll catch recurrent qualities but notice a clear progression in terms of flavour profile. Awesome, awesomer, awesomest, if you will. But it doesn't stop there...
From here, the series will continue with a number of extensions that use these whiskies as a base but focus on a particular additional ingredient or technique. For example, I.1, II.1 and III.1 is partly finished in fresh 50 litre ex-Pedro Ximénez Sherry casks, while I.2, II.2 and III.2 are made with 10% peated single malt from Islay. The .3 extensions (I.3, II.3 and III.3) see the addition of e150a spirit caramel and future releases may include chill-filtered versions, for example.
