A family-run distillery in the Buckinghamshire village of Penn Street, deep in the Chiltern Hills, Griffiths Brothers was founded in 2017 by brothers Alex and Drew Griffiths. That’s the mystery of the name put to bed then.
The duo say that the business started out as a challenge: could they create a gin from scratch that would impress family and friends? A desire to prove that they could lead them to acquire space in a 1930s aircraft factory converted into industrial units by a family friend, which they turned into a mico-distillery.
Griffiths Brothers favour cold (vacuum) distillation process, in which each botanical is individually macerated to draw out its essential oils. The two rotary evaporators ‘Roberta’ and ‘Aretha’ distil each botanical in-glass with a 100% organic wheat spirit. The spirit vapour is then condensed at -8c and each botanical distillation is stored for the flavour to mellow. It is it combined by hand to produce the finished gin. Every bottle is signed.
