Dom Perignon is always pretty fancy but the Plenitude 2 bottlings are an even fancier level of fancy from 'ordinary' Dom Perignon. They are kept back by the cellar master at DP until they reach the requisite standard of extra fanciness before releasing when they are absolutely perfect to drink. This example comes from the excellent 2004 vintage. It's a blend of 65% pinot noir and 38% chardonnay all from Grand and Premier Cru vinyards. It spends 16 years ageing on its lees before it was disgorged in 2021.
Just to take the fanciness to the next level, this comes in a presentation case.
Rich nose of flakey pastry, lemon and meringue with rich yeasty notes. On the palate it's full and fruity with peach and green apple followed by hazelnut and toasted brioche.
