Château de Sassy has its very own Calvados! If you're familiar with its cider, it'll be no surprise to you that this is yet another awesome apple-based treat from the team in Normandy. It's made with a base of young, fruity cider distilled in a column still, and it's aged for a minimum of two years, initially in 300-litre barrels before being moved to much larger barrels (up to 2000 litres!). The casks used are rather old, meaning the fruit flavours of the spirit remain at the fore – further helped by sometimes using casks that previously contained Pommeau. Brill served neat or over ice, though it will work wonderfully in cocktails too.
