It sounds like you don't know about the star system Metaxa have. Metaxa use stars in place of the years so a five star is 5 years old and a seven star is 7 years old and so on but about the flavour change, I do think you have some thing there, the flavour has changed but I don't think it has anything to do with age. There are to many variables.
