His Dashfire Bitters range is clearly influenced by such excursions, which provided the opportunity to research and learn about local herbs and spices. Star Anise, native to China and Vietnam, is one such example, which was chosen for its distinctive flavour, making it suitable for culinary purposes as well as for use in cocktails.
