The Psychopomp Microdistillery in Bristol is clearly having a blast making all manner of tipples, including gin, absinthe and bottled cocktails - and it has now set it sites on a style of spirit you're more likely to see from Scandinavian locales. The Psychopomp Aqvavit features generous helpings of caraway and dill notes, resulting in a heavily herbaceous flavour profile.
Savoury dill notes at the fore, with anise sweetness and subtle mint freshness building. Peppery at points.
