No, not the singer, but the botanical – björk is the Swedish word for 'birch', and you'll find birch buds and birch sap among caraway, fennel, juniper and lemon zest, rested in oak for six months before bottling. The folks behind the spirit suggest pairing it with cured meats, which we can see working very well indeed.
Light woody notes, with caraway, and fennel leading into zesty lemon and piney forest notes.
