The creators of Edinburgh's first absinthe are trying an approachable take on the notorious green spirit. Attempts to undo its unfair reputation include botanicals picked from an on-site distillery garden, grown using composted organic waste, and exclusive artwork by local illustrator Jack Fletcher. It's a charming drink best enjoyed over ice, once you've given it a swirl and allowed it to dilute to about 1:1 (absinthe to water), it should chill and louche (become cloudy), which will make it sweet and oily.
