Here we have an absinthe from those Psychopomp folks over in Bristol (a psychopomp is a being who escorts the dead to the afterlife). This absinthe contains hyssop, dill seed, anise and fennel seed alongside the obvious wormwood, and after distillation it's aged in new French oak. The spirit is bottled at a punchy 62.3% ABV, in a no-nonsense, minimalist bottle.
All of those hallmark anise flavours, a slight floral note with a bitter undertone and herby fennel.
