Peallach is a pseudonym for Ledaig – Tobermory's peated single malt, and Glaschu Spirits Co. has bottled up a fine example here! Distilled in 2014, this whisky spent 10 years maturing, with just over nine years in a refill barrel followed by an eight-month finish in a first-fill Pedro Ximénez sherry barrique from the Ximénez-Spínola bodega in Jerez, Spain.
