Who wouldn't want a single malt Scotch whisky that's been aged for ten years in a first-fill sherry butt from Glenlivet - I mean honestly? Signatory clearly appreciate this beautiful liquid, as they bottled cask #900255 for the Un-Chillfiltered series in April 2018.
Nutty malted barley and damp hay lead in an oil nose with plenty of refined smoke and sour apple boiled sweets.
Earthy peat and spicy oak hold the core that juicy dates and sugared almonds break through. Heaps of toffee and a hint of plum compote hold the backdrop.
Flickers of ginger linger.
I had the luxury of owning and drinking bottle #537, and this one was very delicious. I gave this one an 87 in my notes. This one was one of the smoothest whiskies I have ever tasted, thick and oily. It most resembled the old glenlivet 12, but much stronger flavor, sweeter, smoother, although with a shorter finish. A little side note, odd choice to bottle it exactly one week before it turned 11 years old? I will be keeping my other bottle for many years, and save it for a very special occasion. This release is definitely worth picking up at a good price if it can still be found anywhere :)
