A single pot still Irish whiskey, bottled by the folks at Matthew Whiskey to celebrate their fellow Italian, radical contemporary chef, Juri Chiotti! The whiskey spent time ageing in oloroso sherry casks and its name, Servaj, means "wild" in the historic Occitan language of Chiotti's mountainous homeland.
