Knappogue Castle
In a move away from vintages, Knappogue Castle 12 Year Old is a delicious triple distilled single malt Irish whiskey bottling, having spent its days in bourbon casks.

Earthy malt, peppery bite of oak, vanilla. The taste Spicy oak bite followed by butter cookie and light fruit. Interesting with impressions of youthful scotch. I was bouncing back and forth on if I liked this and decided I do. One cube changes the character to less youthful and into nice and interesting, if not strong, for an Irish whiskey.
This would be excellent to give to someone who has never tried whiskey. It's sweet, but only mildly so, its flavorful but not the peat and smoke flavor that sometimes scares off newbies. Its not quite stout enough to pair with a cigar but it would be nice as an after dinner drink. I like to keep a bottle on hand to give to those who want to get away from mixed drinks but who don't want the full-on blast some full flavor whiskies have.
