Kilchoman Maury Cask Matured is a distinctive limited edition from the Islay farm distillery, marking the first time the team has released a whisky matured entirely in Maury wine casks. Rather than finishing an already matured whisky, Kilchoman filled its spirit directly into the fortified wine casks.
Maury is a rich, sweet fortified wine from the Roussillon region in southern France, typically made from Grenache Noir grapes, and the casks bring a deep vein of dark fruit and honeyed sweetness to Kilchoman’s characteristically bright, peaty spirit. Bottled at 50% ABV, this release offers an unusual cask influence rarely seen in Scotch whisky, particularly in full-term maturation rather than finishing.
Dates, raisins, and fig jam are joined by dark honey and treacle. Peat smoke rises gently underneath alongside orange peel, toasted oak, and a faint wine-soaked richness reminiscent of black cherry and cocoa.
Waves of molasses, sultanas, and stewed berries alongside Kilchoman’s earthy peat smoke, while hints of marmalade, liquorice, and spiced oak add depth.
