Indie Inchgower, distilled in Speyside in 2016 and matured for six years, part of which was spent finishing in a first-fill Pedro Ximénez octave! The Single Cask bottled it up in 2022, with an outturn of 82 bottles at cask strength, a generous 57.5% ABV.
A balance of sweet and savoury, with cured meats, red grape skin, rancio, and black pepper.
Earthy oak, jammy raisins, sweet malt, and salted caramel.
Red apple, dried cherry, spicy oak, a flecks of dried herbs.
