This single malt from Highland Park sees the lightly peated Orkney Scotch whisky has been finished in a Pedro Ximénez cask, bringing rich notes of dried fruit and winter spice. A limited outturn of 306 bottles, which join The Cooper's Choice series from The Vintage Malt Whisky Co.
Floral smoke, dried apricots, and cinnamon and clove spice.
Spiced fruit cake by the fireside, with smoked heather, raisins, figs, and some candied citrus.
Gently toasted spices, and some oaky vanilla.
