Imagine a distillery founded in 2005, that patiently tells all who ask that they'll release their whisky "when it's ready" right up until 2018! Then imagine it's set in gorgeous old farm buildings dating from 1655, and that it's still in fact a working farm capable of providing the full complement of barley used in their distillation!
Sound cool? Sound like the kind of whisky journey worth getting on board with? Well imagine no longer!
Only running during the farm’s quiet periods of mid-summer and winter, and sometimes producing as few as 100 casks per year, this 2008 vintage vatting of 23 of those casks was bottled in 2020. Optic barley from the family-owned and run farm's south fields was used, and a total of 6,000 coveted bottles were produced in total for our delectation.

A deep vanilla aroma reminiscent of crème brulee appear immediately, with some tinned peaches, dried cocoa powder and a delicate grassy note building.
Fresh fruit explodes on the palate with green apples, pears and some melon, developing into soft peach and a slight tropical note, there’s also a pleasant herbaceous almost earthy note on the mid palate.
The oak appears again on the finish, offering vanilla pods, clove, cinnamon and some melted honey.
