This Copeland limited-release pot still Irish whiskey was distilled twice in copper pot stills, then matured for nearly five years in a first-fill bourbon cask before a short finishing period in California Pinot Noir wood. Bottled non-chill filtered and with natural colour, it balances silkiness with spice and structure.
Vanilla cream, toasted oak, soft red berries and gentle baking spice.
Mouth-coating with dried berries, liquorice, caramel sweetness and peppery spice.
Medium-long with lingering fruit, oak warmth and a dry, spicy close.
