Joining independent bottlers Signatory Vintage's Cask Strength Collection is this Islay single malt from Caol Ila. Distilled in 2007, the whisky matured for 16 years, with a finish in a first-fill oloroso sherry butt for 26 months. The superbly sherried Scotch whisky was bottled without any added colour in 2023, with an outturn of 698 bottles.
Nose: Meaty smoke, with toasted nuts, raisins, and winter spices.
Palate: Sherry sweetness, more barbecue smoke, with some toasted coconut, and more winter spices.
Finish: Lingering smoke, and peppery spices.
