Cracking single cask Caol Ila here, distilled in 2008 and matured in a bourbon cask for over 14 years until it was bottled by The Vintage Malt Whisky Co. for its The Cooper's Choice series. An outturn of 420 bottles, non-chill filtered and naturally coloured.
Coastal peat, with waves of vanilla, and warm spice.
Caramel joins the peat, with sticky gingerbread, and mellow oak.
Lingering peat and caramel, with a sprinkle of sea salt.
