Nose Damp peat, smoked oysters and some sea-washed pebbles form a smoked, marine core that damson jam, stewed blackberries and apricot yoghurt rise through. Vanilla ice cream and thyme honey are present in the backdrop.
Palate Sweet dried fruit, bitter marmalade and dry woody tannins emerge through a slightly saline element. Cured meats, roasted chestnuts and charred smoke follow with touches of creamy lemon meringue pie.
Finish Rich and smoky, with a little brown sugar sweetness.
Overall Delicious, varied and moreish - this is great stuff from Caol Ila.
