Description
The pinnacle of the series, Octomore 16.3 is distilled from single-estate Concerto barley grown on Octomore Farm, Islay, and malted to a staggering 189.5ppm. Matured for 5 years in a combination of bourbon, Sauternes, and Pedro Ximénez casks, then bottled at 61.6% ABV, it stands as the quintessential Octomore expression: bold, terroir-driven, and deeply complex.
Tasting Note by The Chaps at Master of Malt
Nose
Honeyed malt and toasted cereal lead, underpinned by earthy smoke and saline minerality. Floral whispers and maritime breeze join layers of dried apricot, golden raisins, and heather honey.
Palate
Immense and structured, with sweet malt, smoked oak, and waves of sea spray. Rich notes of sultana cake, toffee, and candied citrus peel shine against a backbone of dark chocolate and peat intensity.
Finish
Monumental and enduring, with coastal salinity, floral smoke, and lingering sweetness from wine-soaked oak.
