Rebel Rabbet
The Rebel rabbet range is an experimental series of spirits from The London Distillery Company's Matt McGivern and Dylan Bell - and they're really going for it with the whole "experimental" thing. For RES2, subtitled Misconception, the team took their new make spirit (made with oats, Special B malt, Extra Pale Maris Otter barley and rye, fermented with saison yeast) and aged it for two months in barrels that originally held Buffalo Trace bourbon, and then held triple sec.
Big whacks of orange and caramel, with underlying floral sweetness and a hint of peppery rye.
Imagine Grand Marnier without the sickly sweetness and with a whiskey kick. It's a new combination of flavours -- hard to describe, yet somehow familiar.
Buttery orange and malty goodness. Like an Old Fashioned over ice - very drinkable!!
