Rebel Rabbet RES1: The Holy Trinity
The first release from Rebel Rabbet, the experimental side project of The London Distillery Company's Matt McGivern and Dylan Bell. RES1, also known as The Holy Trinity, is made with a combination of productions techniques from beer, whiskey and gin. With help from local brewery Anspach & Hobday, they brewed oats, Special B malt, Extra Pale Maris Otter barley and rye with Saison yeast (the "beer" bit), distilled it to create new make spirit (the "whiskey" bit - it's an old Irish whiskey recipe, hence the 'e'), then rectified it with pink pepper, cassia, coriander seed, liqourice, quince and vanilla (the "gin" bit).
Tasting Note by The Chaps at Master of Malt
Soft vanilla and dry malt, with splashes of quince and a kick of cardamom. Very well balanced.
