The El Especial limited series from Pensador showcases spirits produced from rare and wild agaves that are sourced from batches too small to be considered for mezcal certification.
JX1 Ensamble con Cucharilla de Jose comes from Jose Garcia, the son and business partner of Pensador's original Mezcalero, Atenogenes Garcia, whose methods share a family resemblance with his father’s, but with a preference for rare agaves and experimental ensambles, as this spirit demonstrates.
He used wild Cucharilla here, technically not an agave but a plant locally considered to be a type of maguey, giving the drink a distinctive flavour profile. This was combined with various agave strains - Tepextate, Bicuishe, and Tobala – which were ground oven-roasted and then naturally fermented. It was then double distilled in a copper alembic still and bottled at 48.2% ABV.
Petrichor, musty earthy tones, BBQ rub, cooked agave, sage, and some tropical fruit.
