The Holyrood Distillery is showing off Edinburgh's history as a brewing city through a series of new make spirits featuring brewing ingredients. For this particular expression, a portion of the distiller's malt has been replaced with crystal malt, which is usually used to make beer, introducing some intriguing flavours to the spirit.

For collecting, not drinking...

This was a challenging dram. It has a slightly sweet aroma from the malt, and a hint of hops. It has a bit going on, but I can't say I really enjoyed it. If I had been blindfolded, I may have said this was some kind of tequila.

Interesting, expensive and not repeatable.
