The Holyrood Distillery is showing off Edinburgh's history as a brewing city through a series of new make spirits featuring brewing ingredients. For this particular expression, a portion of the distiller's malt has been replaced with crystal malt, which is usually used to make beer, introducing some intriguing flavours to the spirit.

This was a challenging dram. It has a slightly sweet aroma from the malt, and a hint of hops. It has a bit going on, but I can't say I really enjoyed it. If I had been blindfolded, I may have said this was some kind of tequila. Interesting, expensive and not repeatable.
